Cauliflower and cream cheese soup
I know I keep banging on about soups but I promise this is a much more delicious soup than the cabbage soup that launched a thousand diets! It is easy to make, tasty and healthy.
1 medium head cauliflower cut into small florets
3 cups chicken stock
200g cream cheese
1 tsp Dijon mustard
¼ cup sour cream
¼ tsp ground nutmeg
Salt and pepper to taste
Fresh chives to garnish
Bring stock and cauliflower to boil in a large saucepan.
Reduce heat and simmer for 20 minutes or until cauliflower is soft.
Process stock and cauliflower with cream cheese in a blender until smooth. Return cauliflower puree in the saucepan. Add cream, mustard, nutmeg and seasoning.
Heat through and serve garnished with fresh finely chopped chives.
Total Cooking time: 40 minutes
Serves: 4 large soup bowls
