Chicken olive and sundried tomato couscous with mint yoghurt
Here is a great recipe that is quick and easy when time is not on your side. Very Mediterranean. Very tasty.
75g Roasted chicken, skinned and cut into small pieces
25g Black olives, pitted and finely chopped
25g Sundried tomatoes, roughly chopped
2 tbsp Lemon juice
3 Basil leaves
1 tbsp Mint, finely chopped
25g Cucumber, finely diced
4 tbsp Fat free natural yoghurt
Prepare the couscous as per the packet instructions. While still warm add the olives, tomatoes, lemon juice and roughly torn basil leaves in to the couscous. Stir.
In a separate bowl add the mint, cucumber and yoghurt. Season to taste.
Spoon the couscous on to a large plate, add the chicken on top and dress with the mint yoghurt.
