Poached eggs on spinach with garlic dressing
Here is a great recipe, why not give it a try this weekend.
3 tbs plain white vinegar
1 tsp salt
1 tbs dried mixed herbs
315g baby spinach leaves, washed
1 tbs butter
Salt and pepper to taste
½ cup sour cream
1 clove garlic crushed
1 tbs fresh chives snipped
Extra fresh chives to garnish
Poach the eggs the usual way. Bring to boil a half filled large saucepan of water. Then reduce heat to a low simmer. Add salt and vinegar. Individually break the eggs into a bowl gently add to the simmering water. Cook eggs 2-3 minutes until they set.
Next steam the spinach until just beginning to wilt. Drain and stir through butter and seasoning. Combine sour cream, garlic and chives. Arrange spinach onto 4 plates, top with two eggs each and serve over garlic dressing. Garnish with extra fresh chives.
